Following the primary food hygiene inspection
carried out in accordance with the Food Service Plan. An officer
will rate the business using the scheme set out in
Annex V Food Law Code of Practice. From this
rating we will award a food business star rating depending on how
well they performed in terms of the following three
areas:
- The current level of compliance with food hygiene
practices and procedures, including cleaning practices, temperature
control and potential contamination from raw to cooked
food.
- The current level of compliance relating to the
structure of the premises including the state of repair of the
walls, floors, ceiling, lighting, ventilation and washing
facilities etc
- Confidence in the management of the business including
having and using a documented Food Safety Management System and
adequate training/supervision of all food staff.
